Join Chef Greg for first hand instructions on using tricks to increase efficiency in your own kitchen. This class focuses on learning how to process ingredients and discover techniques used to speed up preparation time. The class also includes discussion about the restaurant business and provides insight into what happens behind the kitchen doors. Chef Greg walks through a step by step preparation of Cold Melon Soup with Granny Smith apple fries and crème anglaise, Grouper Cakes with jalapeno tarter and mixed vegetable slaw, Bruschetta Chicken Scaloppini and parmesan gratin potatoes, Lamb Lollipops with mint sauce and roasted Tuscan vegetables, and Key Lime Meringue. The price is $ 29.95 per person (plus tax, tip and beverages) and includes a five-course sample, syllabus and recipes.
