“Perlita Caviar”: a Great Product
The Caviar comes from a very rigorous selection of females, 7 to 12 years old. Producer’s commitment is to quality, observedvthrough grains of more than 2.6mm in diameter and, a texture that matches the most well portioned of the species.
The first contact with the product is visual. A particularly care is given about the processing and the homogeneity of the production.
When opening a box, the result must be perfect. All the boxes are packed on the producer’s estate, which ensures consummate market stability.
Control tests conducted on the eve of the fish harvest allow you to know, with certainty, the quality of the harvested grain. Selection is therefore much easier and the focus is on the sanitary aspect of the harvest and preparation. On the farm there is a refining zone with a high volume of water drilled and flowing, so the fish can evolve over several weeks in a totally neutral environment before harvest. This ensures the absence of the risk of any parasitic taste.
The colour of the Caviar reflects the richness of the species, from light grey to dark grey and brown to black. Hence, each box presents perfect homogeneity. The flavours are exceptional.
For a Caviar with fresh walnut tones and high consensual aspects, a recently harvested one is chosen.

Caviar harvested within a few months presents a remarkable balance and complexity, much sought after by amateurs. It is more powerful and perfect when savoured in a delicious recipe.

The quality is a value which is uppermost in Producer’s work. The farm was built for breeding sturgeons and its features allow great accuracy in the selection process,
All fish are equipped with an electronic marker that tracks the daily growth and dictates the best time to harvest. The ultrasound is daily used to diagnose the evolution of the females and forecast future productions. In the laboratory, hygienic conditions are very strict.
All the boxes are packed on the day of harvest for a better life-span on the market shelf, up to ten months.
The fish marking system permits to have conclusive tracking. The fish can be traced back as per the references on the box without any difficulty, and equally trace back the harvested females to their breeding couples.

Caviar tasting is always a special moment. In order to enjoy fully, may we offer some recommendations.
This product is sensitive: it supports neither the rise in temperature nor frost: Above 5 °c it may become impaired, below -5 °c it will freeze and the grains can burst. Thirty minutes before serving, gently open your box.
You can serve in either initial packaging or transfer the Caviar delicately into a neutral container. You can present on crushed ice to keep the product fresh.
The choice of the utensil used to taste Caviar is important because the latter oxides when in contact with metals. It is suggested to avoid the use of silver cutlery or any silver metal. Mother of Pearl and stainless steel are recommended.
It remains a moot point when recommending a beverage to suit Caviar so much so that this choice should remain personal.
However, it is important to mention that “Perlita Caviar” is fresh and has subtle flavours; hence combining it with the spirits, is cautionary. Some Cognac or Whisky can suit savouring of young Caviar. The sparkles of elegant Champagne is considered the norm while white wine can also make this moment magical.
