Notta Cupcake™ bakes up gluten-free, healthy options

Lauren Crawford, 11-year-old entrepreneur and owner of Naples-based Notta Cupcake™, has introduced a gluten-free recipe that rivals the rich flavor of the original chocolate cake-in-a-cup sensation.

Packaged in a gluten-free certified facility, Lauren’s patented cake mix blends gluten free flours with sugar, and spices.  The accompanying semi-sweet chocolate chips are soy-, dairy- and nut- free and processed in a nut free facility.

Launched in 2010, Notta Cupcake™ offers a convenient chocolate dessert option that can be made in about three minutes. The recipe is so easy even a child can do it with parental supervision. Sold online and in her mother’s interior design shop, Lauren came up with the idea after attending a summer cooking camp.

“When I learned how to make a cake in the microwave, the idea came to me that I could create my own recipe just like the Cake Boss,” explains Lauren. “My mom helped me experiment with ingredients until we reached just the right flavor and consistency.”

From the beginning Lauren and her mother Pat wanted to make the desserts to be consistent with a healthier lifestyle.

Once the recipe was perfected, Lauren moved on to ensure that the branding reflects the quality and childlike fun that are as essential as her ingredients.  As a result, the cheerful displays, gift-wrapping, printed materials and website are coordinated in tones of brown and pink with flowers and polka dots.  

In less than two years, Lauren has seen a significant increase in sales especially among pre-teen girls, their parents and those seeking healthier, gluten-free desserts.

Notta Cupcake™ kits contain cake mix, chocolate chips, icing (except in the gluten-free version) and easy-to-follow instructions. Lauren and her mom put the sealed packages into a microwave-save reusable mug.  Each kit comes beautifully wrapped for easy gift giving.

New products on the horizon include Notta Cupcake™ aprons and chef’s hats just like Lauren’s.

The Notta Cupcake™ Story
How did this delicious chocolate dessert get its name? Entrepreneur and creator Lauren Crawford, 10 years old at the time, said, “Mom, it’s cake in a cup, but it’s not a cupcake.” Notta Cupcake™ was born.

Mom and daughter set out to find a microwave and dishwasher safe cup that was nontoxic and reusable. They selected a brown ceramic cup with their logo. The cup has a spoon attached for easy cake making. The entire product is branded with a matching website, business cards and even gift-wrap.

Lauren is the company’s CEO and key salesperson, staying on top of every aspect of the business and the product.

“She is learning something really important, which is the value of work,” mom Pat Crawford said. “She gets paid for her sales and she is connecting the value of her work output to the fact that it earns her a payday. A solid work ethic is valuable, and I hope it will help her through her life to understand what one has in life is connected to ones initiative and work values.”

“It’s very fun,” Lauren says. “My favorite part is selling and having fun and meeting new people.”
