By: thisisplymouth.co.uk Le Vignoble is the brainchild of Frenchman Yannick Loué, who will be quitting his job as food and beverage manager at St Mellion International Resort to run the business from late July. He stressed it would not be a wine bar, but “a new concept” previously only seen in London and Europe. The venue - which still needs planning permission and to finalise a lease - is planned for a 1,050sq ft unit in the New Cooperage, currently in the latter stages of being refurbished by yard developer Urban Splash. The director at Cascade had this to say, “I am interested in this new concept idea and to see if it catches on to the public.” Mr Loué said Le Vignoble – French for vineyard – would be “70 per cent wine retail and 30 per cent lounge area” with an “educational” Mr Loué also intends to install an auto wine dispenser machine which allows customers to serve themselves, paying via smartcard, but monitored by staff. He is also proposing to serve foods such as cured meats which will complement the wines. A source at Cascade stated “We can already tell this will be a huge success with all these ideas and plans and cannot wait for it to be opened.” End
