Feb. 9, 2012 - PRLog -- Louisville, KY – Home Cuisine, a totally unique, fresh, nutritious, in-home dining concept serving Louisville customers, is celebrating their eighth anniversary with healthy discounts ranging from 20% to 25% for a week’s meal plan.  

Chef and founder Sandy Pike said, “Louisville has been a wonderful environment for launching and expanding our business.  This is our way of thanking our customers who have welcomed our fresh-food concept with enthusiasm. Throughout the community we see an increased interest in local foods and healthy eating, and we are happy to meet the need in a special way with home deliveries.”

Home Cuisine delivers ready-to-eat, portion-controlled meals that offer a total caloric intake of either 1,200 or 2,000 calories per day and are prepared according to guidelines developed by the American Heart and American Diabetes associations.  The chefs have perfected recipes that do not include refined ingredients, such as white flour, sugar or white rice. Instead, menus, which change weekly, feature fresh seasonal, local fruits and vegetables, whole grains, organic ingredients and lean protein.  Meals are prepared in a professional commissary in the heart of St. Matthews and delivered fresh, never frozen, twice weekly or may be picked up at any of the five Rainbow Blossom stores.  

Dishes include items like low-fat curried chicken salad; lemon-garlic rotisserie turkey breast with brown rice pilaf, tomato and green beans; pork tenderloin with apricot sauce, roasted sweet potatoes, butternut squash, carrots and bell peppers; and grilled chicken with mashed red-skin potatoes and crunchy Asian slaw.  Breakfast items include mixed berry crisp featuring whole oats and pecans and baked on fruit filling with vanilla yogurt and whole wheat oatmeal banana waffles served with berry sauce.

Sandy Pike has been the owner and founder of several popular Louisville eateries including Jack Fry's, Cafe Society and Queen of Tarts.  A great deal of creativity has gone into developing the recipes that draw upon Pike’s 25 years of culinary experience, along with the guidance of food scientists and dieticians at the University of Kentucky and University of Louisville.    

Today Sandy’s daughter, Mae Pike, is also an integral part of Home Cuisine, concentrating on marketing and sales.  You can see Mae during local television appearances to discuss nutrition and great food and conducting cooking demonstrations for groups throughout the Louisville area.  She is seen regularly on Fox 41 on “WDRB in the Morning.”

Their service includes several options:
•   Weekly meal plans that include breakfast, lunch and dinner
•   Dinners only for three nights, five nights or seven nights per week
•   Three family-size meals that feed two adults and two or three children
•   Vegan meals
