Many changes have been made to commercial cooking equipment over the last several years which have resulted in the need to upgrade to current UL 300 standard. While animal fats were once commonly used, they have since been largely replaced with vegetable oils. Consequently, the vegetable oils burn much hotter and threaten to overwhelm the dry chemical extinguishing systems, resulting not only in losses of businesses and revenues, but valuable income for business owners and their employees.
Due to the increasing difficulty in extinguishing commercial cooking fires, the California State Fire Marshal amended Section 904.11 of the 2007 California Fire Code to clarify the application of Underwriters Laboratories Standard 300 (UL300).

A majority of businesses never recover from devastating fire and it is our desire to educate and assist you during this transition period in order for you to maintain a successful business.
•    When? Where? Who?
1.   When does this mandate go into effect?
The UL 300 Regulations become effective January 1, 2008. All businesses must comply with UL 300 no later than the second required servicing of the system after January 1, 2008. All automatic fire Extinguishing systems are required to be serviced every 6 months (C.F.C 904.11.6.4).
2.   Where and who does this affect?
All locations and businesses in the State of California containing automatic fire extinguishing systems used for the protection of commercial cooking operations that produce grease-laden vapors.
3.   Who should perform this upgrade?
Only C-16 licensed fire protection contractors should perform the upgrade. They may need to submit plans for approval with the local jurisdiction.
4.   Which existing systems are NOT affected?
Existing sprinkler systems protecting commercial- type cooking equipment do not require replacement with UL 300 compliant wet chemical system provided they complied with the applicable NFPA 13 standard at the time of installation, and were approved by the Fire Official.
