Meet Eric. 40 years old and owner of East Moon Asian Bistro. It's 2012 and Eric wants to take his wife out to a special occasion: this year he is going to grab the Award at the Top 100 Chinese Asian Restaurants in America.

Jan. 17, 2012 - PRLog -- Washington, DC - Against the wall in one of the three East Moon Asian Bistros Eric Zhuo explains business is good. Snow drifts through the dry air on a cold afternoon in Bowie, Maryland just after the holidays. It's been a good day; actually it's been a very good year. After the busy lunches and the hectic Holiday season, Eric catches his breath. East Moon is industrially designed with vibrant art on the walls. Eric smiles and shows his steady menu, leaving his guests spoiled for choice. This is the place where Maryland families, friends, and locals meet, it sits comfortably between Dunkin Donuts and a joint where you can have your nails done. Business is doing very well, Eric is comfortable. But change is coming.


Born in a family near the East coast, a boat trip away from Taiwan Eric gobbled fish like no one else. 'Every day fresh fish, shrimp, octopus, everything'. Today his mouth waters thinking of lush, fresh and thick sushi. Here in Maryland, East Moon provides all: sushi dishes revved up with lights, or shaped up like a Caterpillar or Dragon. He looks around the place at his young waiters seemingly easy with their boss, dashing on the floor, quick to cater the clients.

He wants to offer more than his tasty menus full of Asian fusion. He's ready to open a new restaurant come February in Silver Spring, Maryland. He wants more, but he also wants better. Eric wants to expand; the Chinese cuisine deserves finesse, grandeur if you will. He dreams big about an 'haute cuisine' style venue where people can enjoy the art and nutrition of the Chinese ingredients. 'I want a high-end experience for customers who can appreciate the art and nutrition of the Chinese kitchen. Like the Italian kitchen, you know healthy portions and beautiful. That’s my dream. And suddenly like he's waiting for his New Year, Eric enthusiastically calls: 'I am thinking about a special New Year for East Moon, maybe I'll arrange a great Prix Fixe for my customers. I'll let you know!'
