Monterey, Calif. –TusCA Ristorante at Hyatt Regency Monterey Hotel and Spa located at 1 Old Golf Course Road in Monterey announces its new seasonal menu.  Chef Johnny DeVivo of TusCA Ristorante melds the best of regional Tuscan cooking with the simplicity of farm-fresh California cuisine with his new menu set to launch the week of December 12th.

Taking his inspiration from the hearty cuisine of Tuscany, the new menu at TusCA presents authentic and sophisticated regional Italian dishes created from the wealth of locally and seasonally sourced California produce, meats and fish.  Through simple preparation techniques such as braising and roasting, the seasonally procured ingredients of California are transformed into satisfying, recognizable, and comfortable meals.

•         Crab Stuffed Paquillo Peppers with Basil, Lemon, Black Pepper and Stracciatella Cheese
•         Baked Eggplant Cannelloni with Roasted Mushrooms, Arugula and Marinara Sauce
•         Beef Carpaccio Pizza with Shaved Filet, Parmesan, Roasted Tomato, Carmelized Onions, Arugula and Horseradish Cream
•         Sausage and Clam homemade pasta with Broccoli Rabe, Italian Sausage, Clams, Chili Flakes, House-made Saffron Fettuccine
