Consuming Canned Soups Elevates BPA Levels, Study Finds

PRLog - Nov. 30, 2011 - Harvard researchers have found that people who ate one serving of canned food daily over the course of five days had a tenfold increase of bisphenol-A, or BPA, in their bodies, according to the New York Times.

Past research indicates that BPA can mimic the hormone estrogen, and thus it is considered to be an endocrine disruptor. Some scientists claim that BPA is not a health threat, but studies have linked the chemical to a greater risk of cancer, heart disease, diabetes, obesity, and behavioral problems in young children.

The recent research done by the Harvard School of Public Health, published in the Journal of the American Medical Association, measured the levels of BPA in urine samples from two groups of participants. One group ate a 12-ounce serving of canned vegetarian soup from a common brand once a day for 5 days, while the other group ate 12 ounces of vegetarian soup made of fresh ingredients every day. After a 2 day “wash out” period without soup, the first group switched to the soup made from fresh ingredients, and the second group ate the canned soup for another 5 days. Participants provided urine samples, which were then tested for BPA levels, at the end of each 5 day period.

After the week of soup with fresh ingredients, the subjects showed urinary BPA levels of 2 micrograms per liter. However, after 5 days of eating canned soup, their levels were above 20 micrograms—one of the largest spikes in any study, reports the New York Times. This is particularly concerning because most people eat more than a 12-ounce serving during the course of a meal, says Dr. Karin Michels, an author of the study.
