With the new Wine Pairing Menu, guests can enjoy a complimentary canapé and glass of sparkling wine before the meal starts. Then, as each of the five courses is served, the sommelier will explain more about each wine and how it perfectly matches the food being served to create an exquisite wine and dine degustation experience. The meal is followed by coffee or tea while guests enjoy the stunning surrounds of the over-water restaurant.
The set menu offers a taste of the finest Asian food with highlights of Japanese, Indian, Thai and Maldivian flavours accompanied by predominantly New World wines that perfectly complement the cuisine and warm climate. Enjoy a starter such as green mango and mussel salad, with a coriander salsa, paired with White Cliff Sauvignon Blanc from Marlborough, New Zealand, a wine renowned for its full ripe tropical flavours. The fish course is a selection of seafood or fresh fish, paired with Chateau l’Ermitage Blanc from the Rhône valley, France, chosen for its smell of crisp white fruits. The main course consists of succulent meats such as grilled sumac spice lamb loin on risotto, paired with the strong spice flavours of Capricornia Shiraz from the renowned McLaren Vale, Australia.
The Wine Pairing Menu is priced at US$120 per person, with a 25% discount for all half-board, full-board and all-inclusive guests, taking the price to US$96.
