TURKEY VEGETABLE STEW 1¼ cups sliced carrot 1 cup sliced celery ¾ cup chopped onion ¾ cup water 1 tablespoon chopped fresh basil 2 tablespoons tomato paste, salt-free if possible 2 (10-ounce cans) low-sodium chicken broth 1 (15-ounce can) of whole Tomatoes (no-salt-added) ¼ teaspoon pepper ¼ teaspoon hot sauce 2 cloves garlic, minced 2 ½ cups chopped cooked turkey breast (skinned before cooking and cooked without salt) 1 (10-ounce) package frozen English peas, thawed 1 (10-ounce) package frozen spinach or okra, thawed Combine first 8 ingredients in a large Dutch oven. Add next 3 ingredients, stirring well to combine. Bring to a boil; cover, reduce heat and simmer 30 minutes. Stir in turkey, peas, and spinach or okra; simmer, uncovered, 10 minutes or until thoroughly heated. Makes 9, 1-cup servings.
