Corder's firsthand experience as a busy single mom left her feeling inept in the meals department. "I knew that alternating between "beans and weenies" and "peanut-butter and jelly" wasn't in line with what I wanted for my daughter," said Corder, "But, I was tired after working 12 hours a day and had no time or desire to cook a meal that would take an hour to get on the table."
She compiled recipes that her daughter would eat and would still satisfy her nutritional needs. "I realized the magic number for me was 20 minutes. If I could make something in 20 minutes that my daughter would eat, that I would also eat, that was delicious, wasn't complicated, and didn't require a long list of ingredients, it was a winner!" she said.
"I knew if I had that problem, so did other single moms. We're all in the same boat: trying to do the job of two parents, do it perfectly and with a smile on our faces," said Corder, "and I know we need all the help we can get!"
