Having a ready response for virtually every conceivable situation helps enormously . . . What if your staff didn't lock the back door after dark? What if only one employee closed out the restaurant and left at 11 pm with the bank deposit? . . . You can easily become ‘sitting ducks’ ripe for accidents, or worse."

In light of the recent shooting at Carson City's IHOP restaurant, the public is nervous and asking questions about safety and security. Cannon comments, "Sometimes these things just happen and there’s very little that can be done to prevent it.  However, certain things can be done to help to discourage this type of event, including installation of security cameras in good locations, well-lit facilities and parking lots, and good 'what-if' policies and safety training for employees.”

Mr. Cannon encourages restaurant owners to manage risks using the "double-indemnity" plan, stating, "Two people take the deposit to the bank. Two people come in at the same time to open the shop. Two or more people leave at the same time. One person is never left with the responsibility of closing the restaurant, as this exposes the restaurant, as well as the employee, to multiple risks."  Employees will feel safer, they will be happier, and restaurants always benefit from happy employees. He adds, "Customers choose where they want to eat. As a restaurant owner, it’s up to you to do everything you can to help them choose your restaurant."
