The 3-course prix fixe dinners, created by The Brown Hotel Executive Chef Laurent Géroli and his four-diamond culinary staff, have been designed to set the culinary stage for each opera. The cost of each Pre-Opera Dinner is $38 per person exclusive of tax and gratuity. Seating times are 5:30 pm, 6:00 pm, and 6:30 pm. Friday, September 23, 2011, Pre-Opera Dinner for Bizet’s “Carmen” – begins with a Tapas Plate of Serrano Ham, Manzanilla Olive, Marinated Octopus, Papas Piri Piri and Roasted Peppers, followed by Pan Fried Stuffed Pepper with Bacalao, Roasted Stewed Tomatoes and Saffron Rice, ending with a Churros Platter with Honey and Chocolate Sauce for dessert.
Friday, November 18, 2011, Pre-Opera Dinner for Mozart’s “The Marriage of Figaro” – features Mussels Mariniere for the first course, Pork and Swiss Chard Choux Farcis served with Basil Tomato Sauce for the second course, and Le Napoleon with Sauce Anglaise for dessert.
Friday, February 17, 2012, Pre-Opera Dinner for Lehár’s “The Merry Widow” – Grilled Chicken Sausage with Roasted Apples, Onions and Whole Grain Mustard Sauce as a starter, followed by an entrée of Roasted Pork Tenderloin, Brussels Sprouts and Roasted Potatoes with a Sage Veal Reduction, and a dessert of Crème Brûlée with Mixed Berry Compote.
