In honor of September being California Wine Month, Royal Rose Radicchio teamed up with Chef Brian Overhauser from Hahn Estates Winery to create a Pinot Noir Radicchio Salad, the newest recipe in Royal Rose "Salads for Adults" Collection.
Warm Pinot Noir Radicchio Salad With Slow Roasted Pork Belly, 25 year Balsamic glaze
Preparation time 2 days
Cooking time: 3 hours
The pork belly should be placed in the brine and chilled 2 days.
5lb pork belly
1 gal water
3 cup apple cider
4 whole cloves
½ cup kosher salt
½ cup brown sugar
10 black pepper corns crushed
2 whole Royal Rose radicchio
4 cups 2010 Hahn SLH Estates Pinot Noir Wine
4 table spoons good aged balsamic vinegar
2 table spoons rendered pork fat
1 table spoon sugar
Place all the brine ingredients in a sauce pot, bring to a simmer and turn off the heat. Let the brine cool to room temp then place the pork belly in the brine and chill for 2 days
