New Marine Cookery Bible is Galley Good

Copies are flying off the shelves after superyacht chef and writer Malcolm Alder-Smith launched his unique and meticulously researched 300 page guide, The Marine Cookery Bible, at the youth maritime charity, UKSA, in Cowes.

PRLog - June 28, 2011 - COWES, U.K. -- The special culinary showcase on June 24 saw a live cookery demonstration from Galley gourmet Malcolm, who showcased popular dishes and cocktails that are now created by UKSA trained chefs and stewards who are working on superyachts across the world.

Canapes, gazpacho shots and marinated olives were followed by fresh Thai mussels and towering crab stacks, giving guests a tasty flavour of the array of international dishes superyacht chefs are required to serve up from the Galley.
   
Hailed by fellow chef and writer Victoria Allman as “a must for anyone who cooks, or wants to cook on board a yacht,” The Marine Cookery Bible is for both newly qualified and experienced crew who are working in the professional yacht and superyacht industry.

But it’s not just essential recipes, menus and perfect food and wine combinations. Malcolm also provides his readers with vital information on the necessary passports, visas and certificates they will need, finding crew houses and crew agents.

There are also sections on food safety, menu planning, tips from experienced crew, best environmental practices and a mini food shopping translation guide for popular European destinations like Spain, Italy and France.

Now Malcolm’s book is being used as course text material by the Ashburton Cookery School and a large maritime training Academy in Australia as well.

Malcolm is on the teaching staff at UKSA, a premier training Academy which has designed and delivers Essential Marine Hospitality to train high calibre staff capable of delivering an exceptional five star level of service.

“This is a burgeoning sector and there is currently huge demand for first class hospitality specialists and experienced people wanting to transfer from other hospitality related careers,” says UKSA Careers Consultant Emma Baggett.
