The canopies along with the ductwork and fans are designed to carry the heat and grease particles away from the point of cooking. The grease then collects within your filters, canopy and ductwork and when it builds up over time in these areas it becomes a fire hazard.

A large amount of fires within food retail outlets are caused due to the grease within extraction systems igniting from fires beneath or caused during the cooking processes. Estimates attribute some 8-10 fires a week in the greater London area to dirty kitchen extract systems.

Insurance companies are rapidly getting tired of paying out enormous sums of money because of large scale ductwork fires and are now threatening to refuse cover unless clients meet standard ductwork cleaning procedures and are now enforcing warranty conditions on their policies that state that kitchen extraction systems are cleaned as a minimum, once per annum.
