Born and bred in the sleepy fishing town of Sciacca in the Agrigento Province of Sicily, this Chef is authenticity personified. As a passionate Sicilian, his food comes from within his soul, and rather than conforming to temporary fad’s or nouvelle styling’s, Chef Palumbo beats his chest with pride at producing real Italian food, re-imagined uniquely for Thailand. Now four months into his tenure at Giorgio’s, Chef Palumbo is ready to unleash his new menu in this picturesque dining establishment on the banks of the Chao Phraya.
Chef Palumbo’s new selection of old favourites breathes re-invigorated life into the most imitated and reproduced cuisine in the World. Of utmost importance to Chef Palumbo are the freshness, quality & sparkle of the ingredients. For a fresh, light taste (so ideal for the Thai climate) you need fresh, light ingredients, and each dish has been carefully scrutinised over to create the perfect blend of texture, essence and luxurious harmony without sarificing the soul of the original dish.
Highlights of the new menu include, from the Antipasti & Carpaccio, the deliciously creamy, yet powerfully poised ‘Asparagi Al Parmegiano’ (Asparagus nestled in a parmesan setting) and the spectacularly blended ‘Baccala Mantecanto Su Tartar Di Avacado E Pomodori Confit’ (Avacado tartar with whisked baccalas & tomato confit) which is assured to please. One of the Chef’s signatures, the spicy gusto of the ‘Risotto Con Gamberi E Nduja’ (Risotto with prawn & spicy salami) which gives a Thai-esque kick to an Italian classic, is sure to satisfy any penchant for spice but in the Italian style.
The new menu’s blend of light yet rich flavours amplify with every mouthful into a culmination of delight and joyous satisfaction and this is exemplified with the pasta offerings, especially with the exquisitely delicate ‘Pansotti Di Carne Alla Crema Di Tartufo’ (pansotti filled with roasted veal in truffle essence) which is a genuine gem in the crown of Chef Palumbo’s toque. Also, be sure not to miss the ‘Funghi Portobello E Asparagi Grigliati in Salsa Di Mozzarella’ (grilled Portobello mushroom, asparagus in a mozzarella sauce), which juicy mushroom and fresh asparagus married to perfection and complimented with a strong, yet perfectly accented mozzarella sauce. And be sure to round off with the classic, often imitated but never bettered, ‘Tiramisu Classico Al Caffe’, with marscapone cream cheese and coffee flavoured lady fingers - a deliciously evil treat you know you deserve.
