Food sensitivities are much more common than food allergies. In a true food allergy, the immune system produces antibodies and histamine in response to the specific food, according to the National Library of Medicine. The subsequent symptoms include itching, wheezing, cramping, swelling and anaphylactic shock - which can occur within minutes and result in death. Food sensitivities produce delayed reactions — from a few hours to several days.
