Gluten: (gluten is a protein found mainly in grains & especially in wheat) and possibly other proteins. Gluten is found in wheat (including kamut and spelt), barley, rye, malts and triticale. Gluten is also used as a food additive in the form of a flavoring, stabilizing or thickening agent, often hidden under "dextrin"(form of glucose). A gluten-free diet will help you lose weight preventing  a condition called celiac disease that damages the lining of the small intestine and prevents it from absorbing parts of food that are important for staying healthy. The damage is due to a reaction to eating gluten, which is called...celiac disease,[The intolerance is triggered off by a combination of different influences, these factors are not the same in each person & so the severity of intolerance varies too. Gluten helps make bread elastic, providing it with that chewy texture it has when eaten. For this reason, flour that has had most of its gluten removed, produces a sticky dough that feels much like chewing gum.

Eating a gluten free diet at its most basic level means eating food/s that are completely free from wheat products or products that contain wheat even in small amounts ( wheat flour for example). This at first sounds pretty straight forward and easy but when it comes down to the practical realities of life, its not at all straight forward or easy.

What foods contain gluten?
A gluten free diet is a diet completely free of ingredients derived from gluten-containing foods: wheat (including Kamut and spelt), barley, rye, oats and triticale, as well as the use of gluten as a food additive in the form of a flavoring, stabilizing or thickening agent. Although most people can tolerate oat products, there is a controversy about including them in a gluten free diet: some medical practitioners say they may be permitted, but the Celiac Society advises against them.

Salad topped with grilled chicken (bought from the butcher, certified gluten-free, without packaged seasonings or spices), dressed with homemade oil and distilled vinegar salad dressing

Salmon poached in white wine, seasoned with salt and black pepper
Steamed spinach topped with butter
Jasmine rice cooked in coconut milk, seasoned with lime juice, grated fresh ginger and a squeeze of lime juice
