Quinoa (keen-wah) is a grain-like crop from South America grown for its edible seeds. It comes in different varieties – but is mainly available as white or red quinoa. It's very easy to prepare and so individuals who don't necessarily prize themselves on their culinary skills will feel at home trying out different quinoa recipes.
When cooked, quinoa has a mild, slightly nutty flavor which makes in highly versatile as a cooking ingredient. It can be served savoury or sweet or just on its own as an accompaniment to a more highly spiced or seasoned food. It's an excellent alternative to white rice or cous cous.
Quinoa is commercially available in the seed-form and also as flour, flakes, pasta and polenta. It's very nutritious, easily digested and the fact that it's gluten-free makes it suitable for those on a gluten-free diet. It contains 12-18% protein and what's more, as it contains a balanced set of essential amino acids, it's a complete protein which is unusual among plants. It's also rich in essential fatty acids – omega 3, 6 and 9.
