Visitors to Trabant Coffee and Chai’s University District store have been greeted by a number of changes over the past few weeks. The front counter has been totally rebuilt to show off pastries and food, and the kitchen has been rearranged to accommodate top-of-the-line cooking and baking equipment. Best of all, the cafe has smelled delicious as Jason Circelli, the store manager, baked off trial runs of croissants and cookies. Last we heard, he was still recruiting taste testers!

Pastries aren’t the only edible addition to Trabant’s menu. Leveraging twenty-years of food service experience, Jason has developed full breakfast and lunch menus. Jason has sourced fresh, sustainable meats, cheeses, fruits, vegetables, and breads to feature as ingredients, with a focus on local wherever possible. He plans to make many ingredients from scratch such as three flavored cream cheeses to serve with bagels, raspberry freezer jam to feature in the PBJ sandwiches, and house-made granola for breakfast.  Many recipes have an international flair, such as the French-influenced goat cheese brioche, the Latin-influenced molé soup, and the Italian chili. Says Jason, “My goal is to have a fun, fresh and unique menu, that will be the highest quality, and that everyone can find something to eat and feel good about.”  Along those lines, he has made sure there will be plenty of options for vegan and vegetarian customers.

Later in the month, Jason plans to debut select dishes at Trabant’s Pioneer Square location as well. “Many of our Pioneer Square patrons are looking for a one-stop shop for their lunch and coffee, since they have to get back to the office,” he says. “We know they’re eager for the new menu, but we want to iron out any kinks before we take our menu down there.”

Of course, Trabant will continue to serve hand-crafted coffee, tea, chai and other tasty beverages at its Seattle coffee shops. Trabant will even be adding some new drinks to the menu to compliment the food. For a healthy, responsibly sourced meal all-around, people can soon head to Trabant.
