By: Gilbert's Gourmet Goodies 2 cups gluten-free rice chex or rice puff cereal ½ cup pumpkin seeds ½ cup sunflower seeds ½ cup dried cranberries ¼ cup dark agave nectar ¼ cup sugar ½ teaspoon pure vanilla extract flax seeds or flax meal to taste Spray a mixing bowl with cooking spray. Measure and mix dried ingredients into the bowl. Set aside. Spray a rectangular baking pan with cooking spray, set aside. Measure the agave nectar and sugar into a pot. Mix and cook over medium heat until the mixture reaches a soft ball stage, approximately 250 degrees on a candy thermometer, or 1-2 minutes. The mixture will look bubbly and brown. Remove from heat, and mix in the vanilla. Pour the sugar mixture into the dry ingredients, stirring quickly until thoroughly coated. Scoop the mixture out into a baking pan. Cool in refrigerator. When cool break into pieces and enjoy! You can scoop trail mix into clear cellophane treat bags and give them out as gifts. * This is a very flexible recipe. You can substitute other seeds, nuts and dried fruit to create your own special trail mix. You can use honey or maple syrup instead of agave nectar. Add in chocolate chips for a sweeter treat - just remember that the chocolate will melt on contact with the cooked sweeteners. Yummy!
