Traditional nonstick cookware uses a coating by the name of PFTE (PolyTetra-FluoroEthylene).  PTFE has well documented disadvantages in practical household use.  It begins to decompose over 260°C/500°F and releases harmful chemicals into the air.  Also, PFTE coatings are manufactured with the aid of PFOA (PerFluoroOctanoic Acid), which is classified as a ‘persistent pollutant of the environment and is known to be a likely carcinogen’*.  *According to the EPA (Environmental Protection Agency, US federal agency in charge of the protection of human health and the environment)

GreenPan is dedicated to using a new substance, Thermolon, which is not only a healthier alternative but also heat resistant to up to 450°C/850°F.  This technology prevents the release of toxic fumes and the coating will not blister or peel. The GreenPan product line is the first safe, nonstick cookware to be made with a nonstick coating of minerals, not plastics.  Also, traditional coatings do not perform as well as Thermolon.  It is a better heat conductor which results in superb searing and crispy frying.
