Marilyn Diamond's Cleansing Diet Recipe of the Day: Persimmon Goji Berry Cacao Pie

A healthy pie that tastes delicious? If you want to indulge in a yummy treat but not suffer the consequences, then try this cleansing diet recipe from health and fitness expert, Marilyn Diamond.

Jan. 13, 2011 - PRLog -- Goji berries must be hydrated for this recipe, so soak overnight or for at least 30 minutes prior to preparation of pie. Do not discard soaking water, which is goji juice!

For the crust:

1 cup almonds, soaked overnight, blanched and skins removed
1 ½ cups seedless honey or deglet noor dates
2 dried bananas
½ cup pecans
¼ cup hemp seeds
¼ teaspoon fresh ground nutmeg or to taste

Combine all ingredients in food processor until a doughy consistency. Form into a ball and kneed briefly. Press into a 10 inch pie plate. Flute edges. Place in freezer, while you prepare crust.

For the filling:

2 large peeled fuyu persimmons
½ cup goji berries, soaked for 30 minutes or more until rehydrated in purified water to cover
¼ cup agave nectar
Nutmeg to taste
2 Tablespoons coconut butter or oil
Pinch of Himalayan salt
½ cup pine nuts
1 cup coconut water
2 teaspoons vanilla
3 Tablespoons raw cacao powder
2 Tablespoons agave nectar
1 cup purified water
3 Tablespoons agar agar

Combine the persimmons, goji berrie and soaking water, agave nectar, nutmeg, coconut oil and salt in a food processor and puree. Combine pine nuts, coconut water, vanilla, agave nectar, and cacao powder in blender and blend for two minutes or until smooth. Heat agar agar in water just to boiling point, lower heat and whisk for five minutes to dissolve. Combine persimmon mixture with cacao mixture. Stir in agar agar and mix well. Pour into frozen pie crust and return to freezer for one hour before serving.

Serve with Cashew, Hemp and Flax milk for breakfast.
