Planking, as the grilling aficionados call it, is a special technique for greatly enhancing that barbecued flavor by grilling seafood, steaks, or vegetables on a thin slab of wood. Not just any wood, mind you, but a precisely manufactured plank of the wood of your choice specifically for grilling. Many kinds of common woods are used, such as hickory, maple, mesquite, oak and maple, but Cedar is the most readily available and imparts the best flavor and aroma to the food. Salmon especially is best grilled on Cedar planks.

Roland Krevitt has had many years of experience in Cedar Plank Grilling. About 15 years ago, he and his wife discovered this wonderful way to greatly enhance the flavor of barbecued dishes. While visiting Holland, they were taken to a seafood restaurant outside of Amsterdam. Grilled salmon was ordered and when it was delivered to the table the aroma of fresh cedar permeated the air. The Krevitts also noted that the flavor was incredible. Roland’s wife declared that they had to find out how this fish was prepared and asked the waiter if he would be kind enough to give them the recipe. He disappeared for a minute and came back with the chef and the cedar plank that was used and described in great detail exactly how this planking process was done. They were hooked and have been Planking ever since.
