'The Balancing Act' Features: Healthy Snack Ideas from the Florida Department of Agriculture

Even though Florida is most famous for its oranges, the state also produces a number of other fresh fruits and vegetables each year.  In fact, 50% of the produce grown in the U.S. comes from the Sunshine State and a great deal of the country’s seafood, dairy, poultry, and livestock as well.  To help raise awareness for the variety of foods the state produces, the Florida Department of Agriculture and Consumer Services (FDACS) maintains promotional programs that not only support local farmers, but also encourage healthy eating habits across the country.  Tune in to The Balancing Act December 17th at 7:00 am (ET/PT) on Lifetime Television to hear Executive Chef Justin Timineri talk about “Fresh from Florida Kids,” a program designed to help parents instill healthy eating habits in their young children.

As part of the program, the FDACS created the Xtreme Cuisine Kid’s Cookbook, a compilation of recipes that all utilize fresh fruits and vegetables from Florida.  On The Balancing Act, Timineri shows off a few selections from the book, including stuffed Florida peppers, “cucumber canoes,” and even a fruit pizza that incorporates Florida strawberries, cantaloupe, blueberries, and oranges.  He also reviews the book’s educational content, which covers areas like kitchen safety, food handling, and meal preparation.  There’s even information about proper table setting, meal serving, and clean up.

“The Florida Department of Agriculture and Consumer Services is committed to providing resources to families that will help them incorporate healthy foods into their lives,” says Yolanda Roundtree, Marketing Manager for the FDACS.  “The Balancing Act is a great opportunity to educate viewers about the variety of foods Florida offers, and introduce them to some really creative recipe ideas for kids.”

In addition to the Xtreme Cuisine Kid’s Cookbook, the FDACS also provides a variety of recipes for making baby food out of Florida fruits and veggies.  Both the cookbook and baby recipes are offered free of charge and can be downloaded by visiting the FDACS website.  Easy step-by-step instructions help parents create nutritious meals and snacks that their kids will love, and that will encourage them to eat healthy foods throughout their lives.
