"Food was above-all the most important element at all the Chinese weddings I attending growing up", says Chef Taryn Wa, founder of Savoury Chef Foods and creator of each of the mouthwatering dishes. "If guests left unhappy with the meal the entire event could be ruined. As more and more of my friends started getting married I noticed that focus wasn't there as much, which I found absolutely foreign. It's only natural for me to put an emphasis on delicious, memorable meals that are original and enjoyable. It's in my heritage."
Examples of unique dishes created by Chef Taryn that bridge cultural gaps include roasted black cod, a staple in Chinese and Japanese cooking, with a sweet miso and chili glaze served with honshimeji mushrooms or a simple grilled bc wild salmon with a sweet soy glaze and grilled fennel. Focusing on incorporating West-coast ingredients wherever possible, Chef Taryn uses local Fraser Valley duck breast that is dusted in five spice powder and pan roasted in a star anise, ginger and orange jus or Pemberton Meadows beef short ribs that are slow cooked in a traditional red braise, with deep rich flavours of cinnamon, fennel, star anise, coriander, ginger and palm sugar.
The latest census figures released by Statistics Canada show that there were 289,420 married and common-law mixed-race couples in Canada in 2006, a third more than in 2001, the last time the data was collected. With Vancouver boasting over double the Canadian average of interracial couples, Savoury Chef Foods has seen a steady increase in the demand for Asian-inspired menus that incorporate both traditional Western tastes and ethnic additions. Over 75% of the weddings already booked with Savoury Chef Foods for 2010 are for intercultural couples, and that percent is growing.
