There are so many ways of using hot chili pepper. We will detail a few.
DRIED HOT CHILI  PEPPER.
Large dried hot chili peppers, widely used in the cooking of Mexico and southwestern USA.
In Mexico smaller varieties of dried chilis are frequently ground and pureed straight into sauce. Asian cooks are more likely to toast small dried hot chili peppers before grinding them.
GRINDING DRIED CHILI  PEPPER.
Wipe the chilies clean, remove the stems, and tear the skins into pieces. Retain the seeds and veins if you need additional heat in the dish; otherwise remove them before grinding.
Using a Grinder:
Dried chili's can also be ground to a fine consistency in an electric spice mill or a coffee grinder. Better results are obtained if the dried chili's are first toasted.
ROASTING FRESH HOT CHILI  PEPPER.
Most chilie's can be used without peeling, but some are roasted and peeled because the skin is tough or because peeling will improve the texture and give a pleasent charred flavor.
Small hot chilie's can be roasted on a pre heated hot griddle or heavy frying pan. Turn them until they darken and soften.
FREEZING HOT CHILI PEPPER.
Fresh chilie's can be frozen after roasting. There is no need to peel them because the skin will come off when the chilie's have thawed.
Blanched unroasted chilies with stems intact for three minutes, then drain in a colander. Let cool completely, place in a plastic bag, and freeze.
Hot chili pepper make a good herbal medicine.
