Amazing varieties of chili peppers are used in Mexico. This nature's medicine is used in every dish.

In Mexico specific chiles are required for specific dishes. Using a different chili pepper can alter the balance of flavors. Jalapenos and serranos appear in salsas, stuffings, and pickles. Dried anchos and pasillas ae often ground to thicken sauce.

Chili peppers are nature's medicine and herbal remedy and help against many llnesses.More than 1.5 billion people use this nature's medicine worldwide. In Mexico alone they are used green and in raw form, also dried and ground to thicken a sauce. When used fresh, green chili peppers are preferred.
There are quite a variety of chili peppers found in Mexico and here is a list of a few popular ones.
Serrano: Mid green, cylindrical, crisp, with a fresh grassy flavor and very pungent seed and veins. It ripens to bright red and is used in sauces.
Jalapeno:  Bright green, some with dark patches, quite fat with thick flesh. They have a light flavor and are medium hot.
Habanero:  Lantern shaped, mid green ripening to yellow, orange and deep red. Mostly used in the Yucatan, raw or roasted, to flavor beans and sauces.
Chilaca: Thin, deep red and shiny, with vertical ridges.Roastedand peeled they are used in vegetable dishes.
Cascabel: This is round and brown-red, with a smooth translucent skin. The seeds rattle when you shake it. Moderately hot,it is usually toasted and blended with tomatoes.
Ancho: This is a dried poblano. Deep red-brown in color and used ground for sauces.
Guajillo: This is long and slender, with a blunt point. It is soaked and blended for enchilada sauce.
So many different chili peppers and so many different ways to enjoy their taste. The best part, this nature's medicine adds spice to your diet and it is good for you!!
