PRLog - March 12, 2010 - LUTON, U.K. -- Bakers know that all the care they take in the preparation of delicate pastry and bread dough can be ruined at the final baking stage if oven conditions are not right. Both dough and pastry require a sensitive and precise regulation of humidity, temperature and airflow.
Rational's SelfCooking Center showing baking mode
Rational have designed the baking mode on its SelfCooking Center to take care of this difficult process fully automatically. At the touch of a button, everything is baked to perfection – nothing is spoilt or wasted. All the baker has to do is to select the degree of browning and the SelfCooking Center does the rest, continuously checking and making adjustments to the baking time even if the door is opened.
The SelfCooking Center cooks an incredible variety of different sweet and savoury products: biscuits, filo and puff pastry, cheesecake, coffee rings, apple strudel, muffins, cream puffs, éclairs, bread, rolls, baguettes, ciabatta and croissants. It takes into account mixed loads, balancing the cooking times accordingly.
To make it even easier the SelfCooking Center has integrated the proofing step into the baking mode, so the baker doesn’t have to check and reset the process after proofing. Once the unit is loaded the baker simply selects proofing and baking. The products are then proofed and baked to perfection all in one easy stage.
And that’s not all, the new CareControl system continuously monitors the cooking cabinet instigating the fully automatic cleaning programme when necessary once the baking has finished for the day.
