Sweet sea scallops are dusted with cream of wheat and quick-seared, then paired with an aromatic bacon and sweet corn risotto and finished with lavender curry cream.
This succulent entrée joins an engaging menu of creative fusions and modern updates. Everything from classic shrimp cocktail to steak and fries has been turned up to deliver Forte flavor.
Behind both the menu and concept is celebrated Executive Chef and Food & Beverage Director Shane Sutton. Chef Sutton began his culinary career in his native home of Hawaii apprenticing at Le Guignol, today considered one of the top fine dining restaurants in Hawaii. It was here that he developed his creative, yet unintimidating style and his knack for contrasting textures and flavors.
After working as Executive Chef and Owner of Le Guignol for seven years, Chef Sutton moved with his family to Las Vegas in 2005 seeking a new culinary challenge.
Following prestigious positions at several Las Vegas restaurants at the Paris Hotel and Casino and The Palms, Chef Sutton is excited to present a vibrant concept in Forte Grille.
