There is no doubt that not only children but also their parents have a favor of cheese. However, people should remember that cheese is easily spoilt. If you want a safe and good meal with cheese, please take care of the followings:

Cheese should be held for some time at suitable temperature and humidility, depending on what kind of cheese. It is really good idea to store cheese in your refrigerator. Keep it wrapped tightly in plastic, away from air because air may help mold grow on cheese. If you get a little mold on the outside, just cut it off as soon as possible to prevent it from expanding. But the English believe that if mold won’t eat your cheese, it can’t taste very good!

Cheese should be brought to room temperature before melting. You can melt cheese over a low heat to help prevent toughening and separation of oils and liquids. Some cheese which melt smoothly are ideal for a toast for quick snacks, while many tend to become stringy or suffer from a separation of their fats.

Finally, remember that most ripened or aged cheese is low in moisture content and can be frozen without darastic flavor and texture changes. Thaw slowly in your refrigerator for 24 hours or more. If frozen for several months, the cheese may dry out and become crumbly thawed.
