The tuna is line-caught using live bait and traditional rods and reels, putting less stress on the fish which gives it better flavor. Once caught, the Ventresca, which is only cut from select parts of the belly, is immediately cleaned, filleted and packed all by hand because of its delicate nature. This canned tuna fish is dolphin-safe and packed in Spanish extra virgin olive oil.
Unlike other parts of the tuna, Ventresca fillets have a very smooth, delicate texture and a rich, buttery flavor. The fillets can be enjoyed right out of the can, eaten as a healthy indulgent snack, or used to make a number of gourmet foodsdishes.
