Whole Foods Market sushi vendor, Genji Inc., is conducting a test in the 18 stores it operates in its South Division (NC, SC, TN, GA, AL) by marketing the majority of its items as “wheat-free,”
The primary ingredients in sushi are rice mixed with sake wine (mirin), fish (raw or cooked), and vegetables. Grated wasabi root (sometimes referred to as Japanese horseradish)
During the test, all wheat-free items will be labeled with “wheat-free”
