Seattle, WA – About a year ago, Dawnette Allender, training manager for The Espresso Connection, a 9-store espresso chain, was at her wits end. High employee turnover in the espresso business had made training a seemingly endless chore, and even with an expensive 80-hour training program, new baristas couldn’t seem to retain the information they’d learned.
As she traveled from store to store, Allender found that even some long-term baristas didn’t know the answers to even simple questions about quality espresso coffee. But she certain that a yearly re-training program would be financially crippling especially in the current economy. Allender kept asking herself a question common in the espresso gourmet industry, “Does it really need to be this difficult?”

So the chain joined forces with Seattle coffee roasting company, Silver Cup Coffee to create a solution. Instead of spending hours training new employees and re-training long-term baristas, the team decided to focus on the effectiveness of the training program itself.
Out of this process was born a 40-minute DVD Barista Certification system. Baristas read instructional slides, watch the live-action DVD, fill in their workbook, and pause on special practice slides. The system is designed for baristas to use in their respective store on an portable DVD players.
The new training system is so easy to use,” said store manager Candice Iverson, “Because employees can watch the DVD between customers, we are now able to do a yearly re-training with seasoned employees, at any time at no additional labor cost. The system has noticeably imporved our overall quality.”
