To make a relish: Combine 4 tbsp of Chimichurri blend with 1/2 cup of hot water to reconstitute the dry herbs, stir and let stand for 15 minutes. Add 1/2 cup olive oil, 1-2 tbsp apple vinegar, 1 tbsp lemon juice, and 2 tbsp balsamic vinegar. Let the flavors meld for at least 2 hours in refrigerator before serving. Chimichurri improves after a day or two in refrigerator allowing all the spices to have a chance to infuse into one another. The relish can be refrigerated up to a week.
