Piedmontese Beef Featured At Food & Wine Classic In Aspen

Montana Ranch Brand Piedmontese Beef was the favorite protein served at the most exclusive invitation-only industry event in Aspen.

July 29, 2009 - PRLog -- Thousands of the greatest culinary minds descended upon Aspen, Colorado for the world’s premier epicurean event known as the FOOD & WINE Classic, an exclusive three-day event during which world-renowned chefs and the culinary elite share trade secrets. Among the topics discussed at this year’s Classic was the industry’s increasing commitment to natural sustainable products that are source-verified. Highlighting this trend at their premier invitation-only event, TWO TWELVE ACCESS ASPEN featured Certified Piedmontese Beef from Montana Ranch Brand all three nights to the enthusiasm of top celebrity chefs and industry leaders.

The Fifth Anniversary of Access Aspen was located just blocks from The Grand Tasting Pavilion at a private mountainside mansion. Each night, Two Twelve Access Aspen hosted the best and the brightest of the hospitality industry, which had the pleasure of dining on Montana Ranch Brand’s authentically natural Piedmontese beef throughout the course of the weekend.

Beginning with the Thursday night opening of Access Aspen, servers passed sliced Piedmontese beef striploin with charred tomatillo relish on a cornbread crouton, as well as Piedmontese beef sliders with aged white cheddar and caramelized onions on mini potato rolls. On Friday night, guests enjoyed grilled Piedmontese beef ribeye on ficelle toast with peppercorn hollandaise sauce, and on Saturday afternoon, Montana Ranch provided Milagro Siesta with Piedmontese beef skirt steak for their delectable taco station. Then the final evening of Access, Montana Ranch pulled out all the stops, serving Piedmontese beef tartare on brioche toast with a quail egg! As in the past, Two Twelve Access Aspen was the talk of the town and considered the best late night event during the Classic.

Throughout the event, there was a common disbelief expressed among those that tasted Piedmontese beef for the first time. The comments ranged from “it tastes like what beef should taste like” to “that has to be dry aged prime.” For those that were not familiar with the Piedmontese breed of cattle, the conventional wisdom was that great tasting beef required an ultra fatty prime cut of meat that has been dry aged for tenderness. However, to the delight of the guests at the Access Aspen event, they discovered that they could experience truly delicious tender beef without the excessive fat found in traditional prime beef.
