After countless hours in the lab formulating chocolate, testing chocolate, and tasting chocolate Bryn Kirk has moved on to a new chocolate venture, teaching about chocolate at Chocolate University Online.
Chocolate University Online is dedicated to teaching people more about their favorite food. Course topics include the health benefits of chocolate, understanding the basics of chocolate tasting, learning flavor descriptors for chocolate, comparing milk versus dark chocolate, and understanding how chocolate is manufactured.
These and many other topics, along with a lot of tasting, are grouped into fun lessons delivered, via email, once per week for 40 weeks. Each lesson is quick and easy to read, packed with information. Every lesson introduces new material, defines chocolate terminology, and provides a couple recipes. Most lessons also have a “chocolate laboratory” to introduce experiments and tastings, and an assignment that helps students put their new knowledge into practice.
Bryn Kirk, who refers to herself as the “Primal Chocolate Therapist,” is the course facilitator. She is a veteran of the chocolate industry having worked for nearly 10 years at Ambrosia Chocolate in Milwaukee, Wisconsin. While at Ambrosia (owned by W.R. Grace and then ADM) Bryn worked in research and development producing new chocolate formulas. She was also trained to run the chocolate taste test panel for the new products they developed.
Now Bryn brings this expertise to Chocolate University Online so that chocolate lovers everywhere can enjoy chocolate, and learn why they enjoy chocolate.
