Oct. 9, 2008 - PRLog -- Good food, wonderful friends nearby, and a joie de vivre are internationally shared values. But no one celebrates them more heartily than people in New Orleans. So it’s no surprise that native Pam Lyles has captured all the necessary ingredients for living life to the fullest in her new cookbook, Da Cajn Critter.

Da Cajn Critter outlines Lyles’ rules for “being a critter.” This first rule is, “there are no rules.” Throughout the book Lyles emphasizes having fun in the kitchen and turning it into a spot for socializing while creating meals with friends and family. She also explains the New Orleans custom of “makin’ groceries.”

Lyles conveys the same “come one, come all” spirit of New Orleans in the recipe collection she presents, including recipes she has collected during her international travels and others that have been passed down in her family for generations.

Uncle Alan’s After-Thanksgiving Gumbo is a thorough recipe that will clear out the refrigerator after the holiday. Authentic Louisiana, the recipe calls for Liquid Smoke to taste, which truly does enhance a delicious gumbo.

Serving Aunt Norma’s Blintzes for brunch would be classic New Orleans. Add a Spicy Cajun Martini and Sunday morning will have never looked better.

Da Cajun Critter has eight chapters full of delicious, easy recipes, including a chapter with “A Little Something Extra,” which offers charts for roasting meats and poultries, a guide for wine pairing, the history of King Cake, and even tips for decorating with flowers and candles.
