La Posta Panama supports responsible tuna fishing

Aug. 30, 2008 - PRLog -- MARKET and La Posta Restaurants, owned and operated by industry veteran New Yorker David Henesy have added to their think global buy local menu by united with the Fisherman's Coop of Pedasi to replace the imported fish normally used in fine dining. Small groups of individual fisherman set out in the early morning hours to fish for Tuna, Pargo and Flounder in the pristine waters of the Pacific off  Pedasi, Azuero Peninsula in Panama. Their catch is delivered on ice imediately for use in the two restaurants, immediately ending their reliance on imported product.

yellow in Tuina is  found in open waters of tropical and subtropical seas worldwide. It is an epipelagic fish ranging in the top 100 m (330 feet) of the water column. Reported sizes have ranged as high as 239 cm (94 inches) in length and 200 kg (440 lb) in weight. Also known as ahi tuna, from its Hawaiian name ʻahi, yellowfin is becoming a popular replacement for the severely depleted supplies of bluefin tuna. because of its size (and age) mercury levels are not an issue with this species.
