Aug 30, 2008 – MARKET and La Posta Restaurants, owned and operated by industry veteran New Yorker David Henesy have added to their think global buy local menu by united with the Fisherman's Coop of Pedasi to replace the imported fish normally used in fine dining. Small groups of individual fisherman set out in the early morning hours to fish for Tuna, Pargo and Flounder in the pristine waters of the Pacific off Pedasi, Azuero Peninsula in Panama. Their catch is delivered on ice imediately for use in the two restaurants, immediately ending their reliance on imported product.
