Just in time for the start of summer, Three Brothers Butcher of Bayside has introduced an expanded BBQ offering. Recognizing the increase in demand for quality BBQ in New York, Chef/Owner Tom DiLeo felt the best way to satisfy his customers was to add to an already established BBQ menu. "I have customers coming in everyday asking for BBQ, telling me that they have heard that we smoke our own meat…which we do" DiLeo said. Smoked Italian Sausage and Pulled Smoked Chicken have been added to store favorites, Pulled Pork, Ribs and Smoked Brisket.
At Three Brothers, they take their BBQ seriously, smoking the same quality meat products that are offered in their gourmet butcher selection. "When you start with our quality of meat, its going to give you a higher quality product than you would find in most of the popular BBQ chains" DiLeo declared as he casually spread his "dry rub" on an impressive rack of St. Louis style Ribs. Apparently the difference doesn't end at the meat quality, "Most places are too sweet, the bbq sauce overpowers. We try to keep the flavors in harmony." Rounding out the BBQ meats are the homemade sides that Three Brothers Butcher has become well known for, cornbread, skillet corn, macaroni and cheese and potato salad. According to DiLeo though, most people go for a sandwich topped with their homemade coleslaw.
What's next for Three Brothers BBQ? "We've been experimenting with the smoker, throwing a few unlikely cuts in" DiLeo said with a grin. When I asked him if he could divulge what they were, he just said, "Let's just say you would be surprised." I know I'm looking forward to it.
