Two veterans of the mortgage industry, Tiffany Silva and Brooke Garcia, felt firsthand the pressures brought on by the subprime fallout over the last year and saw it as an opportunity make a change and bring something new to Orange County. Together with friend Courtney Herrin, the women created Lazy Lunches: a healthy lunch option, catering to individual office workers and corporate events. Having worked in Orange County for one of Southern California’s leading homebuilders over the past ten years and motivated the by the increasing restrictions imposed on the lending industry, Tiffany and Brooke jumped at the opportunity to start something that would help many of those still struggling. Courtney, who recently left her job as National Sales Manager for an auto parts manufacturer, felt the trickle-down effects of a troubled economy in the automotive industry as well. The three women, familiar with the ordeal of grabbing a quick bite during the OC lunch hour - especially in the JWA area - noted the recent demand for eateries that offer convenience and high quality, healthy, organic ingredients.
