1. It can cause dishes to stick together, resulting in handling difficulties,
contamination issues, dropped dishes, spilled dishes, etc.
2. Any time there is standing water (condensation)
the chances for bacteria growth.
3. Water begets water. If water is building up between stacked dishes, it
can facilitate water getting inside the dishes. This hampers cell growth and
makes the colonies appear stringy.
